Sun, coconut and chocolate

I prepare myself to another week after two days of reclusion.
Work left the sun outside of my window and I get even with chocolate coated coconut…
[This month's Performance magazine featured more two recipes of yours truly!]

Chocolate coconut bars
Makes 18 (13 g each):
100 g grated coconut
140 g condensed milk
200 g 70% dark chocolate, to coat
Combine coconut with condensed milk until smooth.
Refrigerate for 20 minutes.
Remove from the refrigerator and cut small bars.
Melt the chocolate in a double-boiler.
Place the bars on a rack and coat the with the chocolate.
Refrigerate until the chocolate thickens.

The coconut bars above remind me a lot of a chocolate we have over here called ‘Bounty’. Only yours are a lot classier!
It was really interesting to read about how you ended up studying cookery and about your passion for pastry. I’m not a professinal, nor do I have my own blog (I’m only 20 and about to start university studying Fashion Journalism) but I adore baking more so than cookery.
So congratulations, you should be incredibly pleased with your obvious talents.

Hi, I just wanted to say that these are really, really good. I love milk chocolate and made mine with that instead of dark chocolate and I loved it. Kind of reminded me of the Bounty chocolate.
